The best banana muffins. Ever.

This is a fab recipe for using up over-ripe bananas and they make a scrummy lunchbox treat (or a grabbing five minutes with a cup of tea kind of treat too!) Although it has to be said that having four children who empty the fruit bowl like a plague of locusts means that over-ripe bananas are a bit of a rarity in our household. In fact, it never ever happens. And I have to plan ahead to make these muffins and hide a couple of bananas away before my darling offspring get their mitts on them! It’s a really easy recipe to follow and definitely one that you can get the little ones to help with too.

Ingredients (makes 12 muffins)

  • 280g/10oz plain flour
  • 1 tbsp baking powder
  • pinch of salt
  • 115g/4oz caster sugar
  • 2 eggs
  • 250ml/9 fl oz milk
  • 6 tbsp sunflower oil
  • 2 over-ripe bananas
  • 2 tbsp honey

First, pre-heat the oven to 200oC/400oF/Gas Mark 6 and prepare the muffin cases. I used silicone cases this time but of course the recipe would work just the same with normal paper muffin cases in a tray.

Sift together the flour, baking powder and salt into a large bowl then stir in the sugar. In a separate bowl, lightly beat the eggs then add the milk and oil.

Make a well in the centre of the dry ingredients bowl and pour in the beaten liquid ingredients. Stir gently until it is just combined but with muffins, I always find that it is best not to over mix and I always make them by hand rather than in the food mixer. (Although if Santa happens to be reading, I would very much like a pink KitchenAid for the baking of other delicious scrumminess thank you please)

In a separate bowl gently mash the over-ripe bananas with a fork but leaving some lumps as you don’t want it to be too liquid. Add this plus the honey to the muffin batter and stir in but again, be careful not to over-mix.

Spoon the mixture into the twelve cases and bake in the pre-heated oven for about 20-25 minutes. They should be well risen, golden brown and firm to the touch. Leave to cool on a wire rack.

Et voila! The best banana muffins. Ever. Enjoy – I know we did 😉
