Mindful Chef up for review

There are lots of recipe boxes about at the minute and I have to say that I am a huge fan. Having a box delivered to your door with fresh ingredients and new recipes for the week is just so convenient. I remember reading about Mindful Chef a while ago in The Independent and loving the sound of them but at the time, they only delivered in the London area. So when they recently got in touch announcing that they were now offering nationwide delivery, I jumped at the chance to be able to try them out to review here on my blog. You see, they are a little bit different from other recipe boxes as they specifically provide super duper healthy meals – no bread, no white rice, no rice – which is how I mostly choose to eat. It couldn’t have been more perfect for me.

The Mediterranean sausage stew with beans, tomatoes and olives might not have been the prettiest thing to look at but boy was it tasty. The sausages were made from organic Devon pork and very high quality. This took no more than 30 minutes to make and was the perfect bowl of comfort food. The cannellini beans made it a really filling, hearty dish.

The glazed salmon with curried cauliflower rice and flaked almonds was absolutely delicious and the sort of thing that I love to eat. It was a lovely piece of fresh salmon that was marinated in lemon juice, mustard and basil. You were provided with half a cauliflower per portion which is actually much more than I would usually eat. The portion sizes of all the meals were really generous in fact. This might be healthy food but there is certainly no scrimping on portions.

And last but by no means least was the Persian lamb with pomegranate quinoa, aubergine and tzatziki which was probably my favourite dish of all. Again a whole host of lovely fresh ingredients to cook with and a particularly lovely piece of organic Devon lamb steak. The flavours of this dish all complimented each other perfectly. Proof indeed that being healthy does not mean compromising on flavour. This was amazing.

The food all arrived carefully packaged and the ingredients for each meal are provided in separate bags with your meat and fish in a special cooler section. I especially loved that in the week I tried it out, there was pork, lamb and salmon dishes. I like to eat a variety of meat and fish so this really ticked all of the boxes for me. The recipe cards provided gave good, clear instructions and even provided details of calories and macros per portion.

There are new recipes each week that can all be prepared in less than 30 minutes. All food is delivered fresh from their West Country farms to your door and they use award winning organic meat. Mindful Chef recipe boxes are available for 1-2 people and you are sent the exact quantities you need so there is no waste. The ‘Lean’ box that I trialled starts from £7 per meal which given the quality of the ingredients and variety of recipes, I would say this is really good value. Obviously you are paying for a lot more than just the food here. You are paying for an incredibly convenient service and amazingly healthy recipes that have been designed by professional chefs. Mindful Chef gets a huge thumbs up from me!
